Almost Time To Close

I am counting the minutes until closing time. I plan to lock all the doors, pull the curtains and pretend I am not here. It will still be light out; but I have no swimmers in the pool, no pending arrivals and I am all alone tonight. I have my favorite soap, The Young and The Restless on DVR. I plan to watch about 3 weeks of episodes. I am not answering the phone. I will be in my bed with my four legged children and popcorn along with ice cold coke. I am salivating as I watch the clock!

Last night I had a cooking lesson from one of my campers, Don. I now know how to make tabbouleh. He even brought me extra ingredients for later! He is with the pipeline group, but he is living in a tent. That alone is intriguing to me. He is wonderfully intelligent and I enjoy talking to him (I am old enough to be this young man's mother). I like to meet people with different views on life (I would NEVER live in a tent). As it turns out he is quite the chef. I made a dessert last night that was a little different from the normal pies and cakes that all southern women are known for.

It was a cherry torte with a saltine crust, then a layer of meringue that was then baked for 10 minutes. The next layer was supposed to be cherry pie filling, but I had cherries from my trees that I had frozen, so I made a filling out of those with a little sugar and cornstarch. All of that was to be topped with freshly whipped cream. I improvised and used cool whip that I had on hand. It was really tasty. I liked the sweet and salty combination with the tart cherries.


Love of my life left us to the kitchen duties and wasn't at all excited about the tabbouleh. He ate a casserole that my daughter left in the freezer for us. It was her version of Shepherd's pie. I ate a bowl of my tabbouleh for supper tonight. It was better than yesterday.

Two more minutes!! All the stars and planets are aligned and I will soon be in TV heaven. You all have my permission to lay odds as to how long I will last in my soap opera marathon before I am asleep!

Oh a Cherry Torte! I'd love a slice...I can nearly taste it...and I haven't made a saltine crust in ages...maybe today will be the day! Enjoy your soap!

The pie sounds wonderful and I LOVE tabouleh. I just don't know how to make it. I think I have a recipe for it somewhere on my computer at home. I'm going to have to dig it out and fix it. It's such a great hot weather food and my hubby loves it as well.

It is so important to take time for yourself during your busy season. We all need to recharge. Enjoy your soaps, popcorn, coke, and four-legged friends.

I love couscous and cooking as a whole! There are hundreds of great recipies out there using it and it takes no time at all to cook - I just stick mine in a container, cover it with boiling water with a half a stock cude and cover for ten minutes - it can be used like rice for any sauce based meal! Wonderful!

I confess that I did answer one phone call from a friend. I made it through two episodes before I fell to sleep and slept until husband came home. I was wonderful...except for the popcorn in the bed.

Haha I hope you got to watch at least a couple days worth.

And I want some pie now!!

I look forward to your posts too, I even talk about some of them with my husband. He still talks about the weird man with his girl in the pool in the rain. I'm happy to at least have one cause ruled out today, but I'm not excited about all these antihistamines he's got me on. Better than the headaches though (fingers crossed this is all it is).

I'm on vacation so haven't been reading blogs much, but did read your tale of the idiot with the fireworks and got many chuckles from it. Love your term for the child "cloud of destruction". Will have to catch up on the rest when I get back to reality!

Sounds like you were really looking forward to your night - it sounded great - all the "P" words - Popcorn, Puppies, and Pop! LOL! I don't watch soaps but I have a lot on my DVR, too! Sometimes I have to rewind a show 5 times because I've fallen asleep during the last 10 minutes! LOL!
